BROCCOLI SALAD
Salad Ingredients:
1 bunch Broccoli
1 small Carrot, shredded
1/2 Cup Dark Raisins
1/2 Cup walnut pieces-roasted in microwave for 3 minutes. Stir after 1-1/2 minutes to prevent burning
1/2 small Red Onion, diced fine
1/2 pound thick cut Bacon, diced fine
Dressing Ingredients:
3 medium cloves Garlic, minced fine
2 Tablespoons Hellman's mayonnaise
1/3 Cup sugar
1 teaspoon Salt
1/3 Cup Brown vinegar
1 Cup heavy cream
Method:
Fry the diced bacon until very crisp. Drain on paper towels.
Cut broccoli heads into small florets, then slice stems into 1/8" - 1/4" pieces. Transfer to a bowl, then add the carrot, raisins, red onion and bacon. Toss lightly.
Whisk together dressing ingredients until the sugar dissolves. (I usually double the amount of dressing. You can use your own judgement.)
Add the dressing to the salad and mix well to coat all the pieces. Cover and place in refrigerator overnight to allow flavors to blend.
Just before serving, add the walnuts and toss the salad well to re-coat the ingredients with the dressing. (If you add the walnuts the day before, they will absorb the dressing and get soggy)
